FEIJOADA

         

Definitely, I'm not a cooker! :o)))

Now and then, I like to open  my recipe book, just to bake a cake or to

 prepare an Italian pasta to my hubby and son... But I do want to share with

 you our National Dish: "Feijoada"!

First of all, I'd like to explain what is the meaning of "feijoada". "Feijão"  

means beans and a "feijoada" is a meal made with beans!

 

 

 

Here we go!

 

I think you'll be able to find all the ingredients either in a Cuban

 or in an Mexican supermarket!

 

3 pounds of salty pork meat

3 pounds of dried meat

2 pounds of black beans

2 varieties of sausages

3 salted pork ribs

lean bacon

onions

cooking oil

garlic

green onion

fresh coreander

parsley

Optional: 1 pork ear, 1 pork tail, 1 pork foot (all salted)

 

 

 - The day before, gather all the salted ingredients and put them

in a recipient with fresh water in order to eliminate salt excess.

-  Next day, put the beans to boil in a big pot with plenty of water.

- Cut into regular pieces the other ingredients and boil them in another pot.

- One hour after, add the salted meats and the sausages to the beans.

- When everything is almost cooked, fry the green spices in oil and add

 them to the stew.

- Try and see if there is too much salt and leave it cooking under medium

 heat until everything is well cooked (if so add some more water).

- Before the meal is served, put the beans aside in another dish and serve

 them in two separate dishes, meat in one and the beans in a bowl.

- Peel and slice the oranges.

 

 

 

 

A "feijoada" is served with white rice, "farofa" (a mixture of manioc flour

 fried with butter and sliced onions) and the oranges! And if you like a little

 drink along with your "feijoada" , try a "caipirinha"  which is blend of vodca

 (or "cachaça", a liquor made of sugar cane), lemon

 juice, sugar and ice!
